YOU WILL NEED:
For the Dough:
- 500 g ( 4 cups) All-purpose flour
- 20g (4 tsp): Dry yeast
- 1 tsp: Sugar
- 2 tbsp: Yogurt
- 1 tsp: Salt
- 50 ml Oil (3 ½ tbsp) – neutral, e.g., sunflower
- 250 ml (1 cup). Lukewarm water
For the Filling:
- 1 medium Onion (finely diced)
- 4 Garlic cloves (minced)
- 400 g ( 14 oz) Ground meat
- Salt and pepper to taste
- 150 g ( ~1 ½ cups) Mozzarella cheese (shredded)
DIRECTIONS:
- Step 1: Prepare the Dough
- In a small bowl, combine the lukewarm water, sugar, and dry yeast. Let it sit for 5–10 minutes until frothy. This activates the yeast.
- In a large mixing bowl, mix the flour and salt. Add the yogurt, oil, and the activated yeast mixture. Knead the dough until smooth and elastic, about 8–10 minutes by hand or 5 minutes with a stand mixer.
- Cover the dough with a damp towel or plastic wrap and let it rise in a warm place for about 1 hour, or until it doubles in size.
Step 2: Make the Filling
- Reheat your oven to 180°C (350°F) with ventilation.
- Punch down the risen dough and divide it into 8–10 equal portions.
- Flatten each portion into a circle, spoon some filling into the center, and seal the edges by pinching them together to form a ball. Place the buns seam-side down on a baking tray lined with parchment paper.
Step 4: Final Touches
- Mix the beaten egg with the sour cream and brush it over the buns. Sprinkle sesame seeds on top for a classic look.
- Let the buns rest for 10–15 minutes for a final proof.
- Cover the dough with a damp towel or plastic wrap and let it rise in a warm place for about 1 hour, or until it doubles in size.

- Bake in the preheated oven at 180°C (350°F) for 25 minutes with ventilation, or until the buns are golden brown.

- Lukewarm Water: Ensure the water is warm (37–40°C / 100–105°F) to activate the yeast effectively.
