- 4 large leeks, cleaned and sliced
- 500 g (1 lb) mushrooms (any variety you prefer), sliced
- 2 tablespoons butter
- 200 ml (1 cup) dry white wine
- 2 eggs
- 120 g (1/cup) sour cream
- 1⁄4teaspoon salt
- 1⁄4teaspoon pepper
- 1⁄4teaspoon nutmeg
- 120 g (1⁄2 cup) grated mozzarella
DIRECTIONS
- Preheat the Oven: Preheat your oven to 180°C (350°F).

- Whisk eggs & sour cream: Combine eggs, sour cream, salt, pepper and nutmeg. If using a whisk, whisk vigorously until there are no more lumps.
- Assemble the Casserole: Transfer the creamy leek and mushroom mixture into the prepared baking dish, spreading it out evenly. Sprinkle the grated mozzarella cheese over the top.
- Bake to Perfection: : Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly.
