In this seasonal casserole, leeks are teamed up with mushrooms and with a crispy, cheesy  topping make a yummy side dish.

YOU WILL NEED:

  • 4 large leeks, cleaned and sliced
  • 500 g (1 lb) mushrooms (any variety you prefer), sliced
  • 2 tablespoons butter
  • 200 ml (1 cup) dry white wine
  • 2 eggs
  • 120 g (1/cup) sour cream
  • 14teaspoon salt
  • 14teaspoon pepper
  • 14teaspoon nutmeg
  • 120 g (12 cup) grated mozzarella

DIRECTIONS

  • Preheat the Oven: Preheat your oven to 180°C (350°F).

 

  • Sauté Leeks and Mushrooms: In a large skillet, heat the butter over medium heat. Add the sliced leeks and cook until they begin to soften, about 5 minutes. Stir in the sliced mushrooms to the skillet and cook until they release their moisture and become tender, about 8-10 minutes. Season with salt, pepper and nutmeg to taste.

 

  • Whisk eggs & sour cream: Combine eggs, sour cream, salt, pepper and nutmeg. If using a whisk, whisk vigorously until there are no more lumps.

 

  • Assemble the Casserole: Transfer the creamy leek and mushroom mixture into the prepared baking dish, spreading it out evenly. Sprinkle the grated mozzarella cheese over the top.

 

  • Bake to Perfection: : Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is melted and bubbly.
