YOU WILL NEED:

  • 120 g (1 cup) all purpose flour
  • 60 g ( 1/2 cup) walnuts
  • 1/2 teaspooon  baking powder
  • 1/2 teaspooon  baking soda
  • 1/4 teaspooon salt
  • 120 g (1/2 cup) butter
  • 100 g sugar (1/2 cup) 
  • 1 tablespoon orange zest
  • 2 eggs
  • 1-1.5  orange (1/2 cup) orange juice

DIRECTIONS:

  • Preheat Oven: Preheat oven to 180°C (350 °F). Spray a 20 cm (8-inch) round cake pan with non-stick cooking spray and line the bottom with parchment paper.
  • Cream Butter and Sugar: In the processor, add the butter, sugar, and orange zest. Process for 45 seconds until the mixture is light and fluffy
  • Prepare Dry Ingredients: In a food processor, combine the flour, walnuts, baking powder, baking soda, and salt. Process for 1 minute and 30 seconds until finely ground. Transfer the mixture to a bowl.
  • Add Eggs: Add both eggs to the butter mixture. Process for a few seconds until smooth, scraping down the sides of the processor to ensure everything is well mixed.
  • Combine Wet and Dry Ingredients: Add the ground flour mixture to the processor, and process for process for another 10 seconds until combined. Transfer the batter into the prepared pan and spread it evenly.
  • Bake: Bake in the middle rack of the oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool and Serve: Place the pan on a wire rack to cool. This cake is fantastic when warm, so feel free to enjoy a slice soon after it comes out of the oven.
