YOU WILL NEED:

  • Whole heads of garlic
  • Olive oil
  • Salt and pepper (optional)

DIRECTIONS

  • Preparing the Garlic

Start by preheating your oven to 400°F (200°C). Take the whole heads of garlic and carefully remove any loose outer layers, leaving the skin intact. This step is important to keep the garlic cloves protected during the roasting process.

  • The Roasting Magic

Next, using a sharp knife, slice off the top 1/4 inch (0.6 cm) of each garlic head, exposing the tops of the cloves. Drizzle a generous amount of olive oil over each head, ensuring that the oil seeps down into the cloves. For an extra kick of flavor, sprinkle some salt and pepper on top.

  • Wrapping and Roasting

Individually wrap each prepared garlic head in aluminum foil, forming a tight seal. Place the wrapped garlic heads on a baking sheet and transfer them into the preheated oven. Roast for approximately 40-45 minutes, or until the cloves turn soft, golden brown, and fragrant.

  • Cooling and Extracting

Remove the baking sheet from the oven and allow the roasted garlic to cool for a few minutes until it’s safe to handle. Carefully unwrap the foil from each head, taking care not to burn yourself. The roasted cloves should be soft and easily removable from the papery skin.
