YOU WILL NEED:

  • 2 ripe mangoes
  • 250 ml (1 cup) coconut milk
  • 80 g (1/4 cup) honey or sweetener of your choice
  • 1/2 teaspoon vanilla extract (optional)

DIRECTIONS

  • Prepare the Mangoes

Start by peeling the mangoes and removing the flesh from the pit. Cut the mango flesh into small pieces and set aside.

  • Blend the Mangoes

In a blender, add the mango pieces and puree until smooth. If desired, you can leave a few small chunks for added texture.

  • Combine the Ingredients

In a mixing bowl, combine the mango puree, coconut milk, honey (or sweetener of your choice), and vanilla extract (if using). Stir well to ensure all the ingredients are thoroughly combined. Adjust the sweetness to your preference by adding more or less honey.

  • Pour into Popsicle Molds

Carefully pour the mixture into popsicle molds, leaving a little space at the top to allow for expansion as it freezes. If you don’t have popsicle molds, you can use small disposable cups and insert popsicle sticks into the center.

  • Freeze the Popsicles

Place the popsicle molds in the freezer and let them set for about 1 hour. After an hour, insert the popsicle sticks into the partially frozen popsicles. This will help them stay in place. Freeze for an additional 3 to 4 hours or until completely solid.

  • Enjoy!

When the popsicles are fully frozen, remove them from the molds by running them under warm water for a few seconds. Gently pull on the sticks to release the popsicles. Serve immediately and savor the tropical goodness.

Note: If you have any leftover mixture, you can store it in an airtight container in the freezer and enjoy it as a refreshing smoothie later.

With just a few simple ingredients, you can create a tropical delight that will have everyone clamoring for more. These Coconut Mango Popsicles are the perfect balance of sweetness and creaminess, capturing the essence of a tropical paradise in every bite. Whether you’re lounging by the pool or hosting a summer gathering, these homemade frozen treats are sure to be a hit. So, beat the heat and indulge in the flavors of summer with these delightful popsicles!
