YOU WILL NEED:

  • 1 large head of cauliflower
  • 2 hard-boiled eggs
  • 1/2 cup diced celery
  • 1/4 cup diced red onion
  • 2 tablespoons fresh dill chopped
  • 1/4 cup chopped fresh parsley
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 1 tablespoons Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

DIRECTIONS

  • Prepare the vegetables:

Wash and cut the cauliflower into small florets.

Place the cauliflower florets in a pot, and add enough water to cover them. Bring to a boil over medium heat, then reduce the heat to simmer until they are fork-tender (about 10-12 minutes)

Drain and let them cool completely.

  • Hard-boil the eggs:

Place the eggs in a saucepan and cover them with water.

Bring the water to a boil over high heat, then reduce the heat to low and let them simmer for 9-10 minutes.

Transfer the eggs to an ice bath to cool. Once cooled, peel and chop them into small pieces.

Prepare the dressing:

In a small bowl, combine the mayonnaise, Greek yogurt, Dijon mustard, lemon juice, chopped dill, chopped parsley, salt, and pepper. Mix well until the dressing is smooth and well-combined.

  • Assemble the salad:

In a large mixing bowl, combine the cooked and cooled cauliflower, chopped eggs, diced celery, and diced red onion.

Pour the dressing over the mixture and gently toss until all the ingredients are evenly coated.

Adjust the seasoning with salt and pepper according to your taste.

  • Chill and serve:

Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together.

Once chilled, give the salad a final toss and garnish with additional chopped dill and parsley if desired.
