YOU WILL NEED:

  • 250g (2 cups) all-purpose flour
  • 250g (1 cup) yogurt
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 250ml (1 cup) vegetable oil
  • 100g (1/2 cup) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup fresh tarragon leaves, finely chopped

DIRECTIONS

  1. Preheat your oven to 180 degrees Celsius (350 degrees Fahrenheit). Grease and flour an 20 cm (8-inch) cake pan and set aside.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat the eggs and sugar together until light and fluffy, about 2-3 minutes.
  4. Add the oil, vanilla extract, yogurt and tarragon, and beat until well combined.
  5. Gradually add the flour mixture to the egg mixture, and beat gently until just combined.
  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.
  7. Bake for 30-35 minutes, or until a toothpick inserted in the center of the cake comes out clean.
  8. Remove the cake from the oven and let it cool in the pan for 10 minutes before removing it from the pan and transferring it to a wire rack to cool completely.
